What i eat in a day #2 - Vegan! ft. Flora Freedom, Giant Crumpets & Another Buddha Bowl!

Breakfast

A perfect rainy day breakfast. I love these giant crumpets by Warburtons, so much, that one is not enough! Plus i couldn't decide whether i wanted 'butter' or jam - so i ended up having both. I tried this new Flora Freedom as a butter alternative. Safe to say i loved this breakfast. Lunch

Usually a buddha bowl of some sort - so quick and easy when i can't be bothered (which is most the time). This time i threw together a salad with edamame beans, Cauldron ready made falafels and some carrots dipped in hummus. I am hummus obsessed, i can eat a full tub a day easily. This really fills me up and is a perfect post-gym lunch.

Dinner

Smothered in Ketchup post-photography. Green beans and ketchup is a favourite of mine - they're just not the same without. This dinner was a mix of all the things i needed to use up in the fridge. I had some 'mexican mixed beans' for Asda which i just heat up in the microwave. I had some cous-coys (Ainsley Harriet Tabbouleh flavour) mixed with edamame beans. A 'spicy bean burger' from Mae's Kitchen at Aldi. This made a yummy mexican style feast - my favourite.
